Coconut Milk Fruit Topping

I created this “ice cream” recipe to use as a dessert topping for fresh berries – a delicious healthy dessert with no refined sugar. It helped me out when I was not eating sugar but still needed a treat.

NOTE: This is a NO SUGAR recipe intended for eating with fresh berries or something that is sweet enough by itself. If you’re looking for traditional sweet ice cream recipe, you will be disappointed.

Ingredients:

  • 2 13.5oz cans organic coconut milk
  • 4T fresh grated ginger (or the pre chopped variety from a jar)
  • 1T cinnamon

Mix all ingredients together with a hand mixer or blender. Place in ice cream maker until frozen. (check the amount of liquid your ice cream maker takes – this amount is perfect for mine, about one quart). My review: the ice cream is tasty, but is is on the icy side, not as creamy as regular ice cream.

Alternate uses: Instead of making ice cream, just drizzle the topping over fresh berries and eat. It is also delicious if you fry slices of yam in coconut oil until soft and lightly browned on both sides, then put the berries on top and top with coconut milk topping. YUM!
